    Temperature-controlled alcoholic fermentation in stainless steel tanks with maturation about three months in autoclave.

  • Vinificazione

    Vinificazione in bianco di uve a bacca nera. Selezione del grappolo in vigna e in cantina a cui segue la pressatura. Cernita dei mosti e decantazione statica a freddo. Fermentazione alcolica a temperatura controllata in acciaio. Affinamento in acciaio 2 mesi che precede la rifermentazione. Presa di spuma in autoclave con metodo Martinotti.
