    Grapes selected in vineyard and harvested by hands in small cases.
    A few clusters without overlapping them.They are put to be dried in a cottage located within the vineyard, where the windows sealed by mosquito nets create a natural ventilation with the microclimate of the
    vineyard.
    Hunged one by one on threads distancing them from each other to facilitate the ventilation at 360°.
    The drying takes place from November to January, afterwards clusters are put back in small cases and brought to the cellar for being pressed.

  • WINEMAKING

    Soft and vacuum grape squeezing of the entire cluster, static and cold decantation of musts, temperature-controlled fermentation in stainless steel tanks.

  • WINE REFINEMENT

    Two years in barriques and minimum six months in bottle.

  • SENSORY DESCRIPTION

    COLOUR : fascinating yellow amber illuminates the glass with its golden reflections
    NOSE : wide and intense with all the aromas that develop from dried grapes.
    Dehydrated yellow fruit, apricot, peach, figs and dates, quinces and pineapples.
    It then opens up to memories of acacia honey, and toasted barley candy, followed by facets of dry mimosa,
    chocholate, carob, candies, raisins.
    MOUTH : Sweet, soft, captivating, of good sapidity and discreet freshness ,the mouth remains clean and
    wrapped in a silky patina rich of direct olfactory memories. Excellent persistence.
